    Be sure to turn the faucet on full blast for five minutes to rinse with a total of one quart of water needed. I never rinse them anyway because you wash away so much of the oils and sweetness the charring process created. A lot of cooking is doing what we see and what someone special does so we just do the same. I like the non necessarily improving on a technique, but imparting a new perspective with the end result always in focus even during the mundane steps. rubbing a little olive oil on the peppers before roasting helps them blister and imparts flavor too.

    I never put the eggplant in the fridge they just need a cool try place in garage or pantry if fine No need to have pressure machine to squeeze put in a towel and squeeze or use your hand I been doing those for years and years never put in fridge and I use only olive oil oregano garlic chill basil fresh or skip

    To make it loose... Fry it well and stirring it, you will put the water when it's full white instead of the 'normal' transparent yellowish. i add the garlic and salt in the end (to avoid burning them). The amount of water to use depends on a lot of factors: Like the size and shape of the pot and the 'dryness' of the rice, but a good rule of thumb is double the volume of rice (so for 1 cup of rice 2 of water). The point to add water i small batches are to not cool down the rice, that will cause it to glue together. But there is another way to avoid this: Just heat the water in another pot or boiler before, heat 2,5 times the volume of rice, start with the 2 'rule of thumb' volume and leave the rest for some adjustment (if needed).

    The whole idea in making light “pillowy” style gnocchi is to remove as much water from the potatoes as possible making it possible to use less flour making it lighter. This recipe does exactly the opposite, actually adding water which is why she needs to add 4 lbs of flour. I would imagine of you ate 3 of these in a sitting it could be a world record. 🪨

    To make salumi, you use #2cure! For sausage use cure #1. .25%x grams of meat= the amount you use, the amount is the same. For salumi also use starter culture(like a yeast) U can stuff with a funnel and case ing!

    Amazing, BUT one tip for sake of your hands Nonna, next time clean seeds from peppers BEFORE you bake them, to be more precise, while they are fresh. Thay way you will not have to burn your hands, and wash them, since you wash the flavour also when you wash them
